We do -- and it works a treat as long as you have cell phone signal (for Google maps or Apple maps). If you travel outside of cell phone (or mobile data range) you have to use an application that will provide offline maps.
In Australia, we have been using Sygic. I works reasonably well between towns, but in the city it tends to get itself tied up in knots... In town, however, you can just use Google maps.
The display of the iPad works very well. It has better brightness than any other GPS unit I have used, and trust me, there are a stack of dead, retired and retrenched electronic units lying around our place!
