      I want to convert my Garmin POI files from a .gdb format to a .CSV format.
What software do I use?

Save Garmin's .GDB files to a GPX. MapSource will do that for you.
Load them with Garmin's POI Loader (GPX is OK).
You can also edit your POI files (GPX or CSV) a save them as CSV files with http://garmin.gps-data-team.com/poi_manager.php
